Founder and Master Distiller at Black Button Distilling, Jason, shares his insights on the bulk spirits industry.
In the ten years since Black Button Distilling was founded by Founder and Master Distiller Jason Barrett at just 24 years old, the Rochester-based distillery has made an indelible impact on not only the local food and beverage scene but the local community. Jason Barrett’s specialty lies in Sales, Cold Calling, Lead Generation, Closing, Contract Negotiations, Contract Administration, and Sourcing.
1) How do you ensure consistency in the quality of your bulk spirits?
With regular training and detailed processes, our distilling team checks each step of the process to produce only the highest possible results. We are relentless in our pursuit of constant improvement and repeatable results.
2) Can you explain your sourcing and selection process for raw materials used in bulk spirit production?
We are a NY farm distillery. So all of our grains come from Edgewood Farms in Groveland NY a 6th generation family farm that custom crops all our grains to our specifications. Our barrels come from 3 primary suppliers who have been chosen based on their quality and consistency.
3) How do you manage the environmental impact of your distillery operations?
We are always looking for ways to reduce water usage and energy usage of being more efficient. Each year our per-unit impacts get better and better.

4) Can you describe any unique or innovative techniques or processes you use in your distillation process?
As far as I know, we are the only producer of double pot distilled farm Bourbon or Rye that can shift between column and pot distillation in the same fun. This allows us to get nice tight head cuts while we also take advantage of the full-flavored center-cut heart runs. It makes for really clean, really tasty whiskey.
5) How do you handle and store your bulk spirits before they are bottled or sold?
We have a variety of stainless steel tanks of varying sizes to keep all spirits separate by lot code before bottling or shipment.

6) How do you stay current with industry trends and changes in regulations that may impact your bulk spirit production and distribution?
By being an active participant in Discuss, ACSA, ADI, the UK Gin Guild and several other organizations. I also read many industry publications each month to stay up to date on the latest trends.
