Master Distiller at Ponfeigh Distillery, Brendon, shares his experience in the bulk spirits industry
Brendon is a distiller with a strong scientific background and a determined entrepreneurial spirit. His multi-faceted experience has helped me become proficient in duties across the distillery, from production management to equipment maintenance.
1) How do you ensure consistency in the quality of your bulk spirits?
Analysis of raw ingredients, sensory analysis
2) Can you explain your sourcing and selection process for raw materials used in bulk spirit production?

3) How do you manage the environmental impact of your distillery operations?

4) Can you describe any unique or innovative techniques or processes you use in your distillation process?
As far as I know, we are the only producer of double pot distilled farm Bourbon or Rye that can shift between column and pot distillation in the same fun. This allows us to get nice tight head cuts while we also take advantage of the full-flavored center-cut heart runs. It makes for really clean, really tasty whiskey.

5) How do you handle and store your bulk spirits before they are bottled or sold?
Minimal exposure to air, no high-proof contact with plastic containers
6) How do you stay current with industry trends and changes in regulations that may impact your bulk spirit production and distribution?
