Polvanera - Black Dust in Italian language - is the winery estate of the Cassano family. Wine growing belongs to Filippo Cassano like the primitivo cultivarbelong to Puglia. Thanks to his father Vincenzo\'s expertise and training and to the “Basile-Caramia” school of Agricoulture in Locorotondo, Filippo Cassano, owner and winemaker of Polvanera, has always known the value of the grapes that grew off his land and therefore decided to bet on a winemaking made in purity. The wine produced using the system of the single variety vinification truly reflects and enhance the characteristics of the terroir and makes these particular wines stands out among its peers. In the 400 hectares of the Polvanera estate, located in the beautiful Apulia - between Acquaviva delle Fonti and Gioia del Colle - you will see extensions of wineyards not only of Primitivo, but also of other native grape varieties like Aleatico, Aglianico, Uva di Troia, Negroamaro, Minutolo, Moscato and Falanghina in a unique landscape of stone walls and white oak trees, strategically located 20 minutes away from the Itria Valley and Matera.
Polvanera’s vineyards are organically cultivated using traditional techniques such as bush training for the old vineyard and spur pruning (or cordon training). Wines will rest for 2 years in stainless steel barrels, red wines will be bottled and stored to age in our unique and charming cellar, carved for over 8 meters deep in the limestone, at a constant temperature of 13 degrees.
Visiting Polvanera estate you will be welcomed in a 1820 Masseria, typical Apulian farmhouse, where you will taste all the wines that we produce, each of them unique because of the vineyard age, of the terroir, and of the terroir elevation that ranges from 300 to 450 meters.
Annual production is 70000 Hl, 35% of which is for bottles.
